It was exactly one year ago that Healthy Living India went live here we are, 12 months later going strong, having fun and, along the way, staying healthy… and helping you stay healthy too. So what we decided to do this entire week, to celebrate our first birthday is to bring you the best posts of Healthy Living India – the best recipes and articles. Best posts as judged by both the most read, the most discussed, the most feedback we got and the most fun we had putting together – especially the recipes. | Our 1st Birthday Meal – Panang Meatballs with Cous Cous |
But we’ll get to that in a bit. To celebrate the birthday, we picked a classic cocktail recipe – Pina Colada – and one of our way earlier food recipes… Panang Meatballs. When we made this recipe the last time, we used pasta and didn’t have peanut butter so it was more of an almost Panang Meatballs… not this time… coconut and peanut in a hearty beef curry. And we ditched the pasta too, this time round… cous cous.
Would definitely not recommend making it without peanut butter. (And true to our mission of information, please also read Peanut Butter is Not Evil.)
Pina Colada Ingredients

| Our 1st Birthday Drink – Pina Colada |
- White rum – 3/4 ounce
- Pineapple juice – 3/4 ounce
- Coconut milk – 3/4 ounce (yes, it was a coconut milk themed meal)
- Ice – 1 scoop
- Cream – 1/3 teaspoon (we made three at a time and put 1 teaspoon – it’s easier)
Method: Blend everything together and serve…You don’t want to blend it till the ice is liquified. Just small enough to be seen but not big enough to have to crunch when they’r in your mouth. To scale, simply multiple the proportions.
